A proposal born from respect for origin, time, and tradition. Flavours of the Dehesa is a cheese experience designed for lovers of authentic, artisanal products, carefully selected to be enjoyed in the peace and intimacy of your bubble.
This board brings together five varieties of sheep’s cheese, where milk slowly transforms into pieces full of character. Each wedge has been chosen for its intensity, texture, and personality:
- Boletus Cheese, with earthy, woodland aromas.
- Black Truffle Cheese, deep and elegant.
- Paprika Cheese, with smoky, vibrant notes.
- Black Garlic Cheese, surprising and sweet.
- Aged Reserve Cheese, long-matured, intense, and lingering.

Entredicho
A wine from the 2020–2021 vintages, blending Monastrell, Syrah, Nebbiolo, and Petit Verdot, sourced from high-density vineyards in Benatae, Sierra de Segura (Jaén). Aged for 8–10 months in barrels, this organic and vegan wine captures the unique character of its origin, balancing intensity with elegance. Its fruity and spicy profile, combined with well-integrated oak, makes it a perfect choice for those seeking complexity and harmony in every glass
Apañao
Nestled in the Sierra de Segura, in the village of Benatae, this red wine blends the essence of Tempranillo and Petit Verdot using low-intervention farming methods. Sourced from a 29-year-old vineyard rooted in clay soils with hints of slate, the production follows an artisanal approach, with hand-harvested, selectively picked grapes and a natural vinification process free of additives or commercial yeasts. Malolactic fermentation occurs spontaneously, and the wine is aged on its lees and for two months in barrel, without corrections or filtration that might alter its true character.
